The menu continues with Anticucho, a classic dish with African roots, and ends with desserts such as Alfajores, Torta de Chocolate, and Cacao Mousse.

Born in Arequipa, he has trained in prestigious kitchens, from Astrid & Gastón in Lima to El Celler de Can Roca in Spain. In the Middle East, he has led acclaimed restaurants in Abu Dhabi, Doha, and Dubai. Today, he honours his roots by creating menus inspired by childhood memories and family recipes. For him, Noche Criolla Dubai is more than food — it is a tribute to Peru’s heritage.
